Quick and Delicious Vegetable Pie with Rice {vegan, gluten free}

Vegetable Pie with Rice Recipe

Hi there! Today I want to share with you this wonderful vegetable pie recipe, which is really easy and quick to make, yet it is perfect for special occasions. :)

About two years ago my mother-in-law taught me how to make this delicious vegetarian pie and for almost a week we were eating only it :D at that time I was vegetarian, so I used to make the original recipe with dough. I will try to veganize it and share the best dough recipe with you. By the way, if you don't have time to cook rice you can surely use frozen puff pastry or some other dough you can buy.

Vegetable Pie with Rice {vegan, gluten free}

Vegetables:
  • about 500g of vegetables cut into cubes (cauliflower, broccoli, carrots, eggplant, pumpkin, frozen green peas and other of choice)
  • 1-2 tbsp of vegetable oil
  • 1 tsp curry
  • 1/4 tsp asafoetida
  • 1/4 tsp cili powder
  • 6 tbsp of water (3 for cooking and 3 for baking in the oven)
Rice: 
  • 1 cup of rice (prepare as instructed on the package)
  • 1/2 tsp turmeric
  • 1/2 tsp himalayan salt
  • 1 tsp of vegetable oil
  • 1 tbsp ground flax seed + 2.5 tbsp of water (mix and let stay for few minutes)
Coconut milk cream:
  • 100ml (3.4oz) full fat coconut milk
  • 1/2 tsp. himalayan salt
  • 1/4 tsp curry
  • + garnish herbs (marjoram, basil, oregano) and tomato

Instructions:
  1. Prepare the rice: boiled together with salt, turmeric and a little oil.
  2. If you use aubergine, then cut it into cubes and marinate for 30 minutes with salt.
  3. Prepare the vegetables: Heat the oil in a pan, add the spices, after 15 seconds, add the vegetables (except peas), mix well and cook with closed lid for a couple of minutes, add 3 tablespoons of water and cook for another 5 minutes.
  4. Pour the vegetables in a baking dish, add three tablespoons of water and green peas.
  5. Mix rice with flaxseed egg and cover all vegetables with it.
  6. Mix coconut milk with salt and curry and spread it nicely on the rice. Sprinkle with herbs and place several slices of tomato.
  7. Bake in 350 degree oven for 20-30 minutes, until the vegetables are tender.

We eat this cake with our favorite sauce:

  • Homemade mayonnaise (may be substituted with full fat coconut milk)
  • Tomato sauce
  • Mashed garlic
  • Herbs (basil, marjoram, oregano)
  • A little bit of liquid from pickles
  • And today we have discovered, that it is delicious to pour in a bit of curry spices in this sauce!
Mix everything well and enjoy!
