Easy Vegan Banana Cupcakes with Chocolate recipe

Yesterday was a very interesting day, full of learning and new ideas. As we are learning from people, who live in America, so there are some days when we have to wake up at 3am to join an online webinar and one of those days was yesterday. Our mentor challenged us with a challenge called 30/30/30:

You have to do these things for 30 days:

30 minutes read positive, motivating, inspiring literature daily (best in the morning or in the evening)
30 minutes watch inspiring, mind lifting videos daily (I choose from Ralph Smart, Robin Sharma, Abraham Hicks, Bashar, Preston Smiles)
and the hardest one:
30 days WITHOUT ANY COMPLAINS. As it is said, if you don't have anything beautiful to say, you better keep quited, both in your mind and out loud.

I added 30 minutes of workout to this list, and some things more.

Today was the first day when I am officially making this challenge. Yesterday I have already tried to control my complains and I have something to say about it, I have never thought I complain so much... :D it is a really brilliant challenge, when you can learn to live fully concious and create your reality with your words and your thoughts, to create what you want, not what you don't want.

and I want some vegan banana cupcakes with chocolate!!!



It was the hardest part of going vegan to let go of milk chocolate and sweet curd cheese "Murr" we have here in Lithuania. Yet now one of my favorites is natural high quality homemade chocolate with no sugar, even if it's 86% cacao, it's still delicious!

When I feel like I really want something sweet - I bake vegan cupcakes. And it has been a while since I bake over and over again these heavenly delicious easy vegan banana cupcakes with chocolate and raspberries, to add raspberry jam was my fiance idea, he loves it and I start to really like it too.


Easy vegan banana cupcakes with chocolate chips recipe

What you will need:
  • 1⁄2 cup ripe banana, mashed
  • 1 1⁄4 cups flour (I used corn, all-purpose flour and a little bit of oats flour)
  • 1⁄4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon salt
  • 1/2 cup unrefined brown sugar
  • 1⁄3 cup canola oil or 1⁄3 cup vegetable oil
  • 2⁄3 cup soymilk or 2⁄3 cup rice milk
  • 1 teaspoon of vanilla
  • 1⁄2 teaspoon almond extract (optional)
  • 2 oz dark chocolate, finely chopped
  • 12 tsp rasperry jam (optional)
Directions

  1. Preheat your oven to 350 degrees and line your pan with paper liners.
  2. Throw your mashed banana in a blender to make sure there are no lumps in it.
  3. Mix flour, baking soda, baking powder, salt and sugar into a large bowl. 
  4. In a smaller bowl, whisk together the oil, soy or rice milk, vanilla, almond and mashed banana. 
  5. Gently fold the wet ingredients into the dry, mix well, but gently. Small lumps are fine.
  6. Fill liners with 1 Tbsp of batter, add about 4 chocolate chips and 1 tsp of raspberry jam or some berries to each. Fill the rest of the better.
  7. Bake 20-22 minutes or until a toothpick comes out clean.
Notes:
*Instead of sugar you can use dates or agave.
*If you want your cupcakes to be gluten free you can use almond meal, corn, oats flour or some other options.:) Also it's very delicious with coconut frosting: full fat coconut milk (left in the fridge for at least 10 hours)  blend with sugar. Also you can make tasty and light frosting with silken tofu

*Jam is not neccessery, but it tastes good. You can also choose from other berries, I think blueberries would be perfect. You can add them on the frosting, so you won't need to cook them.
